Bittman Recipe: Smoky & Sweet Brown Rice Pilaf

It’s What-To-Eat-Wednesday again!

This recipe was an easy pick for me. It’s clean. It’s easy. It has a decent amount of protein/fiber/healthy fats. Plus, I love anything that can be a full meal in one bowl. Yup, this recipe can be a full meal. But, feel free to add chicken or another veggie on the side. You can never have enough veggies, right?!

While this recipe is originally from Mark Bittman, New York Times Writer turned food blogger, my assistant, Brenda, decided to test drive it last week and post the play by play on her blog. You can click here to follow along.

I should note in his original of this recipe, he pointed out the benefit of adding wine time any recipe: “. . . any recipe that calls for ½ cup of wine leaves you with most of a bottle left for drinking, which is never a bad thing.” I love it! I think Mark and I could be great friends!
