Recipe: Chocolate Covered Strawberries

This is one of my favorite summertime recipes. It allows me to bring something healthy to a BBQ without looking like the over-the-top personal trainer nerd. Plus, if I bring these little gems to a BBQ, I know I have a healthy indulgence option for myself so I won’t be tempted by cookies, cupcakes and other junk.

Here’s what you need:
Strawberries
Large Dark Chocolate Baking Bar (dark chocolate = Happy, Healthy Heart!)
Double Boiler (or saucepan + Pyrex bowl)
Wax Paper
Flat Serving Platter

Here's the dark chocolate I use.

Process:

1. Wash and dry all strawberries and set aside.

2. Line your platter with wax paper.

3. Boil water in sauce pan or double boiler. I use a sauce pan and a Pyrex bowl as a double boiler.

4. Once water is boiling, break up chocolate bar and add to boiler. Stir until all chocolate is melted through.

5. Dip strawberries in melted chocolate until they are covered. Use greens as a “handle” to hold on the the berry. Place coated berries on wax paper on platter.

6. Refrigerate berries until chocolate hardens.

7. Remove berries from wax paper and place on serving tray.

YUM!

8. EAT!
