If you’re anything like me, you’ve allowed your veggie prep to get really boring.  Same veggies, same preparation day after day after day.  If you’re tired of steaming or sautéing you veggies, fear no more, as we have just the thing to cure your veggie boredom and entice your taste buds with Carrots 5 Ways!  So whether you’re looking for a healthy afternoon snack for you and the kiddos or an easy side dish at the dinner table, this is sure to do the trick.

For years Mark Bittman has made it his mission to get people cooking and eating well, and this recipe is no different. Mark’s oven roasted carrots are clean, simple, and nutritious. Carrots are a fantastic veggie packed with beta-carotene (helps protect our vision) and are an excellent source of vitamin A, vitamin C, dietary fiber, and potassium. Whoa, that’s a lot of goodness rolled into one little orange stick.  And Mr. Bittman shows us 5 different ways to make them amazing.
